Ingredients
- 4 strips thick cut bacon, sliced into 1" pieces
- 4 Pork Loin Chops 1" thick
- 1 onion, sliced
- 2 fennel bulbs, center removed and sliced
- 1 t. Coriander
- 1 t. Smoked Paprika
- 1 t. Sea Salt
- 1 t. Pepper
- ½ t. dry Mustard
- ½ t. Cinnamon
- 1 can Coconut Milk
- ¼ c. Parsley, chopped
Steps
- In a large pan, fry bacon pieces until fat is nearly rendered. Remove bacon pieces to Slow Cooker. Drain off fat and return 2 T. of fat to pan.
- Over medium high heat, brown both sides of Pork Loin Chops. Remove and place in Slow Cooker.
- Add onion and fennel to pan, scraping up the browned bits in the pan. Cook over medium heat until onion is nearly translucent. Add spices, stir and cook for 2 minutes more. Add mixture to Slow Cooker along with Coconut Milk. Cook on low for 5 hours.
- Serve spooning the coconut sauce mixture over the Pork Chops. Sprinkle with Parsley.
Notes
- Good served over rice.
