Ingredients
  • 4 strips thick cut bacon, sliced into 1" pieces
  • 4  Pork Loin Chops 1" thick
  • 1 onion, sliced
  • 2 fennel bulbs, center removed and sliced
  • 1 t. Coriander
  • 1 t. Smoked Paprika
  • 1 t. Sea Salt
  • 1 t. Pepper
  • ½ t. dry Mustard
  • ½ t. Cinnamon
  • 1 can Coconut Milk
  • ¼ c. Parsley, chopped
Steps
  1. In a large pan, fry bacon pieces until fat is nearly rendered. Remove bacon pieces to Slow Cooker. Drain off fat and return 2 T. of fat to pan.
  2. Over medium high heat, brown both sides of Pork Loin Chops. Remove and place in Slow Cooker.
  3. Add onion and fennel to pan, scraping up the browned bits in the pan. Cook over medium heat until onion is nearly translucent. Add spices, stir and cook for 2 minutes more. Add mixture to Slow Cooker along with Coconut Milk. Cook on low for 5 hours.
  4. Serve spooning the coconut  sauce mixture over the Pork Chops. Sprinkle with Parsley.
Notes
  • Good served over rice.
