Easy One Pot Healthy Zuppa Toscana
Ingredients
  • 1 tbsp olive oil
  • 1 lb turkey sausage,
  • 1 ½ tsp Italian seasoning
  • 6 oz bacon, (chopped)
  • ½ medium yellow onion, (chopped)
  • 6 cloves garlic, (minced)
  • 4 cups unsalted chicken stock, (or broth *SEE NOTES BELOW)
  • 2 cups water
  • 1 tsp sea salt, (more or less, to taste)
  • ¼ tsp black pepper, (more or less, to taste)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • 4 medium russet potatoes, (sliced ¼" thick)
  • 1 cup half and half, (or sub with coconut milk for dairy-free option)
  • 2 cups kale, (chopped, stems removed)
