PAT’S CHICKEN ENCHILADA WITH PASTA

Ingredients
  • 4 chicken breasts cut into cubes
  • 2 tablespoons oil
  • 1 yellow mirabella sweet pepper
  • 1 red mirabella sweet pepper
  • 1 heaped teaspoon lazy garlic
  • 2 shallots
  • 1 box Passata 500 gms
  • 600 mls cold water
  • 2 heaped teaspoons cumin
  • 2 heaped teaspoons chipotle paste
  • 300 gms fusilli wholewheat pasta
Steps
  1. Finely dice the shallots, remove the seeds from the peppers and slice, mix the spices with 100mls of the cold water, sauté the shallots, peppers and garlic add in the cut up chicken pour in the spice mix and 200  mls of the water stir well, cook on manual for 8mins and NPR Then add the pasta and the remaining 300mls of water stir well pour the Passata on top do not mix. Set manual 5 mins and 3 mins NPR
