Ingredients
  • Salt and pepper
  • ¼ C sugar
  • 3 lbs chicken wings
  • 2 C flour
  • 1 T granulated garlic
  • 2 t paprika
  • ½ t cayennne
  • 3 T vegetable oil
Steps
  1. Dissolve salt in water, add chicken 1 to 3 hrs
  2. Wire rack on baking sheet; whisk flour and spices in bowl
  3. Dredge chicken in flour; press to adhere; place on rack and rest for 30 - 2hrs
  4. Two zone cooking; chicken in cooler side for 30, fat side up
  5. Brush with oil, cook another 30
  6. Cool for 10, serve
