Ingredients
- Salt and pepper
- ¼ C sugar
- 3 lbs chicken wings
- 2 C flour
- 1 T granulated garlic
- 2 t paprika
- ½ t cayennne
- 3 T vegetable oil
Steps
- Dissolve salt in water, add chicken 1 to 3 hrs
- Wire rack on baking sheet; whisk flour and spices in bowl
- Dredge chicken in flour; press to adhere; place on rack and rest for 30 - 2hrs
- Two zone cooking; chicken in cooler side for 30, fat side up
- Brush with oil, cook another 30
- Cool for 10, serve
