Cauliflower Tikka Masala
Ingredients
  • 2 teaspoons garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 1 medium head cauliflower (about 2 lb), cored and cut into florets
  • 4 tablespoons extra-virgin olive oil
  • ½ yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 teaspoons peeled and finely grated fresh ginger
  • 2 tablespoons tomato paste
  • 1 ½ cups crushed tomatoes (one 14.5 oz can or jar)
  • 1 cup coconut milk or coconut cream
  • 1 tablespoon fresh lime juice, or to taste (can substitute lemon)
  • ¼ cup finely chopped cilantro, plus leaves for garnish
  • Steamed basmati or brown rice, for serving
