  • ½ cup (60g) red capsicum (bell pepper), finely chopped
  • ½ cup (50g) mushrooms, finely chopped
  • ½ cup (15g) baby spinach leaves, finely chopped
  • ¼ cup (30g) sun-dried tomatoes, finely chopped
