Ingredients
  • You can find all of the following at Trader Joe’s
  • 1 box of Israeli Cous Cous (Trader Joe’s in a purple box or found at AJ’s, the box is
  • mostly blue with a picture of a Middle Eastern building or temple)
  • o To make cous cous use chicken broth with a 1: 1 ½ ratio. 1 cup cous cous to 1
  • ½ cup chicken broth. (optional)
  • 1 to 2 packages of Smoked Salmon (Trader Joe’s/Costco, Chopped. You can use cooked
  • & cooled salmon or semi-shredded chicken instead if you prefer)
  • 2 to 3 packages or 1 large package (Trader Joe’s) of fresh basil, trimmed and chopped
  • (about the same as you would do shredded lettuce)
  • 1 bag sweet corn (Trader Joe’s has a roasted corn in the frozen section that works
  • perfect!)
  • 1 to 2 containers of fresh bruschetta (Trader Joe’s, found in the refrigerator section, the
  • container is red, white and green)
  • ½ cup or so of Pepitas - if you buy them raw you will need to toast and cool them,
  • otherwise make sure to buy them cooked.
  • ¼ to ½ cup of craisins or dried cranberries (add to taste/preference, I prefer a little
  • less)
  • 1 to 4 tbsp Buttermilk or Ranch Dressing (add to taste/preference) - I like to use the Lite
  • House Jalepaño Ranch found in the refrigerated section at the regular grocer
  • Wait for Cous Cous to cool (you can refrigerate for a while or if you are in a hurry, thaw
  • your corn on the counter while you cook the cous cous, let the cous cous sit a few minutes
  • and then mix semi-frozen corn with the warm cous cous and they will even each other out).
  • Prepare all other ingredients as directed and then mix all ingredients together in a bowl, add
  • Ranch to taste, you won’t need much!
