Creamy Skillet Penne with Mushrooms and Asparagus
Ingredients
  • 1 tablespoon olive oil
  • 10 ounces white mushrooms, sliced
  • Salt and ground black pepper
  • 1 shallot, minced
  • ½ ounce dried porcini mushrooms, rinsed and minced (see below)
  • 1 teaspoon minced fresh thyme, or ¼ teaspoon dried
  • 6 garlic cloves, minced
  • ½ cup dry white wine
  • 3 ½ cups water
  • 1 cup heavy cream
  • 8 ounces penne pasta (2 ½ cups)
  • 1 bunch asparagus, trimmed and cut into 1-inch lengths
  • ½ cup grated Parmesan cheese
