Chicken Macaroni Salad
Ingredients
  • 8 ounces (uncooked) Elbow Macaroni Noodles
  • 1½ tbsp kosher salt (only for the water you boil the noodles in)
  • 3 cups fully cooked and diced or shredded chicken breast
  • ½ cup diced celery
  • ½ cup shredded or finely diced carrots
  • 1 cup frozen peas
  • subheading: Creamy Dressing:
  • ¾ cup Light Mayo
  • ½ cup nonfat Greek yogurt
  • ¼ cup milk
  • 1 packet ranch dressing seasoning mix (or about 1½ tbsp homemade ranch seasoning mix)
  • 1 tbsp dill relish
  • 1 tbsp yellow mustard (dijon mustard works here too)
  • juice of half on a lemon (about 2 tbsp) This is technically optional, but it really does brighten it up so nicely
