Ingredients
- 1 large kūmara (or 400g or so of pumpkin), peeled, chopped into 2 to 3cm pieces
- 2 large parsnips, peeled, chopped into 2 to 3cm pieces
- 2 large carrots, peeled, chopped into 2 to 3cm pieces
- 1 swede (if you don’t have swede, just use more kūmara, carrot, parsnip or pumpkin), peeled, chopped into 2 to 3cm pieces
- 1 tablespoon olive oil
- 2 teaspoons liquid honey
- 2 onions, sliced
- 1 tablespoon balsamic vinegar
- ¼ cup water
- 2 teaspoons brown sugar
- 1.5 litres vegetable stock
- subheading: Lemon, chilli and parsley:
- Zest of 1 lemon
- 1 red chilli, chopped
- ¼ cup finely chopped parsley
- 1 tablespoon extra-virgin olive oil
