Nadia Lim's Tips (And Recipe) for What to Do with All That Pumpkin This Winter
Ingredients
  • 1 large kūmara (or 400g or so of pumpkin), peeled, chopped into 2 to 3cm pieces

  • 2 large parsnips, peeled, chopped into 2 to 3cm pieces
  •  
  • 2 large carrots, peeled, chopped into 2 to 3cm pieces
  •  
  • 1 swede (if you don’t have swede, just use more kūmara, carrot, parsnip or pumpkin), peeled, chopped into 2 to 3cm pieces
  •  
  • 1 tablespoon olive oil
  •  
  • 2 teaspoons liquid honey
  •  
  • 2 onions, sliced
  •  
  • 1 tablespoon balsamic vinegar
  •  
  • ¼ cup water
  •  
  • 2 teaspoons brown sugar
  •  
  • 1.5 litres vegetable stock
  • subheading: Lemon, chilli and parsley:
  • Zest of 1 lemon
  •  
  • 1 red chilli, chopped
  •  
  • ¼ cup finely chopped parsley
  •  
  • 1 tablespoon extra-virgin olive oil
