Oil Pie Crust, My Mom's Best
Ingredients
  • subheading: For 9” double crust pie:
  • 1 ¾ cups unbleached, all-purpose flour
  • 1 teaspoon kosher salt, or ½ teaspoon table salt
  • ½ cup plus 1 teaspoon vegetable, canola, or other neutral oil
  • 4 tablespoons ice water
  • ¼ cup milk (of any sort, to top the unbaked pie to encourage browning)
  • subheading: For 10” double crust pie:
  • 2 ⅔ cup unbleached, all-purpose flour
  • 1 ½ teaspoons kosher salt, or ¾ teaspoon table salt
  • ¾ cup plus 1 to 2 teaspoons vegetable, canola or other neutral oil
  • 5 to 6 tablespoons ice water
  • ¼ cup milk (of any sort)
