Ingredients
  • 8 ounce package penne pasta, uncooked
  • 1 cup sliced mushrooms
  • ¾ cup canned diced tomatoes, drained
  • 5 tablespoons olive oil
  • 10 ounce package fresh spinach
  • 3 tablespoons balsamic vinegar, or more to taste
  • 8 ounce package crumbled feta cheese
Steps
  1. Cook pasta according to package directions; drain.
  2. Meanwhile, in a skillet over medium-high heat, sauté mushrooms and tomatoes in olive oil until mushrooms are tender.
  3. Lower heat to medium; add spinach and balsamic vinegar.
  4. Cook, stirring often, for a few minutes until spinach cooks down.
  5. Mix in feta cheese and pasta.
