Secret chili recipe
Chili
Ingredients
  • 2 lbs. ground beef
  • 4 dried ancho chili pods (slice open, remove the seeds, hand tear into small pieces, then place in a dry pan and toast for a few minutes until fragrant, then grind into a powder in a blender or spice mill)
  • 1 large white onion, diced
  • 10 cloves garlic, diced
  • 4 to 5 chipotle peppers in adobo, chopped (save the adobo sauce)
  • 3 jalapeno peppers, finely diced
  • 2 serrano peppers
  •  
  • subheading: Spice mixes 1 and 2 (see below for breakdown):
  • 2 T. chili powder
  • 2 T. ground coriander
  • 1 T. ground cumin
  • 1 T. paprika
  • 1 T. dried oregano
  • 1 T. ground cayenne pepper
  • 1 tsp. sugar
  • ¼ tsp. cinnamon
  •  
  • 28 oz. can crushed tomatoes
  • 2 14 Oz. cans of beef broth
  • 2 T. tomato paste
  • 2 T. finely grated bitter-sweet chocolate (60% cocoa) (from a bar, not pre-powdered)
  • Several tablespoons of peanut butter.
  •  
  • Chipotle powder, cayenne powder, salt, and pepper to season beef to taste before cooking.

  • subheading: Spice Mix 1 (ingredients included above for ease of shopping):
  • 1 T. chili powder
  • 1 T. ground coriander
  • ½ T. ground cumin
  • ½ T. paprika
  • 1 T. dried oregano
  • ½ T. ground cayenne pepper
  • ½ ancho chili powder

  • subheading: Spice Mix 2 (ingredients included above for ease of shopping):
  • 1 T. chili powder
  • 1 T. ground coriander
  • ½ T. ground cumin
  • ½ T. paprika
  • ½ T. ground cayenne pepper
  • 1 tsp. sugar
  • ¼ tsp. cinnamon
Steps
  1. Season the beef with chipotle powder, cayenne, salt and pepper.
  2. Brown the seasoned beef in a large pot.  Add the garlic, onion, jalapeño, and sauté until aromatic and onion is translucent.
  3. Add 28 oz. of crushed tomatoes, 14 oz. beef broth, chopped chipotle peppers with adobo sauce, and ½ ancho chili powder.
  4. Simmer at low boil for 30 to 60 minutes.
  5. Add Spice Mix 1.
  6. Float 2 Serrano peppers (remove from chili before the peppers fall apart - approx. an hour or two after placing them in the chili).
  7. Simmer at low boil for 1 hour.
  8. Add Spice Mix 2 and more beef broth if needed.
  9. Add peanut butter to taste.
  10. Simmer at low boil 30 to 60 minutes.
  11. 5 to 10 minutes before serving, add shaved chocolate.
Notes
  • 2 to 3 hours cook time recommended.
