Healthy Baked Egg Rolls
Ingredients
  • 4 cups bagged coleslaw mix OR 2 c. finely minced kimchi
  • ½ cup canned sliced water chestnuts, drained and minced
  • ¼ cup minced scallions
  • 1 ½ tbsp. reduced-sodium/lite soy sauce
  • 1 tsp. crushed garlic
  • ½ tsp. ground ginger
  • ⅛ tsp. salt
  • Dash black pepper
  • 6 large square egg roll wrappers
  • Optional dip: sweet Asian chili sauce
