Mexican Cottage Cheese Dip
Ingredients
  • 1 (16 oz.) container cottage cheese We like Good Culture or Nancy’s cottage cheese brands - feel free to use low-fat or full-fat.
  • 1 large ripe avocado peeled and seed removed
  • 1 (15 oz.) can black beans drained and rinsed
  • 1 (14 oz.) can corn drained
  • 2 small tomatoes* chopped
  • 1 jalapeño seeded and minced
  • 3 to 4 green onions (green part only)** finely diced
  • 2 teaspoon Sriracha sauce or other hot sauce more or less depending on preferred level of spice
  • ½ to 1 teaspoon garlic salt*** taste and add a small amount at a time
  • salt to taste*** optional, you may not need additional salt
  • chopped cilantro optional to garnish
