Classic French Quiche
Ingredients

  • One half Buttery Flaky Pie Crust recipe (dough shaped through step 2) or store-bought pie crust

  • 8 ounces (227g) bacon (about 8 slices) cut into ½-inch pieces
  • 1 large shallot (2 ounces; 85g), finely chopped (about ½ cup)
  • 2 garlic cloves, minced
  • 1 teaspoon minced fresh thyme leaves
  • 4 large eggs
  • ¾ cup (175ml) whole milk
  • ¾ cup (175ml) heavy cream
  • 1 teaspoon grated lemon zest from 1 lemon
  • ½ teaspoon kosher salt; for table salt use half as much by volume
  • ½ teaspoon freshly ground black pepper
  • Pinch fresh grated nutmeg, optional
  • 3 ounces (85g) Gruyère cheese, shredded (¾ cup)
  • 1 ounce (28g) Parmesan cheese, grated (¼ cup)
