Broccoli Cheese Casserole

Ingredients
- 6 to 8 cups broccoli florets
- 4 Tbs butter
- 4 cloves garlic, minced
- ¼ tsp ground mustard
- ⅛ tsp turmeric
- ¼ tsp sea salt
- ¼ tsp ground white pepper
- ¼ tsp ground black pepper
- 1 cup heavy cream
- 2 + ½ cups cheddar cheese, shredded
- ⅓ cup parmesan cheese, shredded
- 3 to 4 ounces pork rinds, crushed
- ¼ tsp garlic powder
- ⅛ tsp smoked paprika
- ⅛ tsp thyme
Steps
- Preheat oven to 400 degrees F, and grease 9x13-inch casserole dish.
- In large saucepan, bring water to boil to blanch the broccoli. Cook broccoli for 3 minutes, drain, and place in casserole dish.
- In medium saucepan, melt butter over low-medium heat.
- Add garlic to melted butter, and saute until fragrant.
- Whisk in mustard, turmeric, salt, peppers, and then cream. Bring to a simmer for 4 minutes, whisking occasionally.
- Slowly add 2 cups of cheddar cheese and all of parmesan cheese, whisking until melted and smooth.
- Pour cheese sauce over broccoli and stir to combine.
- Layer remaining ½ cup of cheddar cheese on top of sauced broccoli.
- Combine crushed pork rinds with garlic powder, smoke paprika, and thyme. Layer on top of the casserole dish.
- Bake 25 minutes, and then set broiler to Lo and broil 5 minutes until topping is bubbling cheese and crispy pork rinds. Allow to set for 5 minutes before serving.
