Ingredients
- splash of vegetable or sunflower oil
- 2 onions, sliced
- 4 garlic cloves, crushed
- 2 chillies, sliced
- 1 teaspoon cayenne pepper
- 2 teaspoons sweet smoked paprika
- 300g basmati rice
- 400g tin chopped tomatoes
- 600ml hot vegetable stock
Steps
- Gently heat the oil in a heavy based ban and cook the onions until softened. Add the garlic, chillies, cayenne, and paprika, then heat until fragrant. Stir in the rice until coated in the spices. Tip in the tomatoes and stock, stir well, cover with a tight fitting lid and reduce the heat to very low. Simmer for 10 minutes, then remove from the heat and set aside (still covered) for 10 minutes to finish cooking. Remove the lid and fluff up the rice, season and serve with grilled chicken, halloumi, or prawns.
