Joy of Cooking - DATE BARS I

This delicious date bar remains soft and fresh for a long time.

Servings: About 42 two and a half by one inch bars

Ingredients
  • 1 cup sugar
  • 3 eggs
  • 2 cups chopped dates
  • 1 cup broken nut meats
  • 1 scant cup bread flour
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt
  • ¼ teaspoon cloves
  • ¼ teaspoon cinnamon (optional)
  • 1 teaspoon vanilla
  • Confectioner's sugar
Steps
  1. subheading: Sift:
  2. 1 cup sugar
  3. Beat until light: 3 eggs
  4. Add the sugar gradually. Blend these ingredients until they are very light.

  6. 2 cups chopped dates
  7. 1 cup broken nut meats
  8. subheading: Sift before measuring:
  9. 1 scant cup bread flour
  10. subheading: Resift with:
  11. 1 teaspoon baking powder
  12. ⅛ teaspoon salt
  13. subheading: If spices are desired add:
  14. ¼ teaspoon cloves
  15. ¼ teaspoon cinnamon (optional)
  16. subheading: Add the sifted ingredients to the egg mixture with:
  17. 1 teaspoon vanilla
  18. Beat the batter until the ingredients are well blended. Pour it into a 9 x 13 inch pan lined with buttered
  19. paper. Bake it in a moderate oven 325° for about 25 minutes. When the cake is cool cut it into bars. Roll
  20. them in: Confectioner's sugar
Notes
  • I believe this is the date bar recipe that Ila made in 1959 to take on our big vacation. I remember a large Tupperware cake tub of these dates going with up in our Oldsmobile. We ate them at least as far as Devils Tower. Mom fed some to the prairie dogs. I think I remember them getting somewhat dried out by the time we finished them.
