Ingredients
  • 1-½ cups cooked garbanzo beans (either canned, or from ¾ cups dried garbanzos)
  • 2 celery stalks, finely chopped
  • ¼ cup red or sweet onion, finely chopped
  • 1 medium garlic clove, finely minced or grated
  • 2 tablespoons capers
  • 1 tablespoon caper "juice"
  • ½ cup chopped cilantro (or sub other herbs -- dill, basil, Italian parsley, tarragon)
  • ⅓ cup mayonnaise or vegan mayo (we used Just Mayo)
  • 1 tablespoon whole grain mustard
  • Salt and freshly ground black pepper, to taste
  • 10 slider buns
  • 1 cup arugula
  • 10 toothpicks or decorative sandwich skewers
  • 10 cornichons
