Tartest Lemon Tart Recipe by Dorie Greenspan
Ingredients

  • 1½ cups all-purpose flour
  • ½ cup confectioners' sugar
  • ¼tsp salt
  • 9Tbsp unsalted butter, very cold, cut into small pieces
  • 1large egg yolk
  • butter, enough to butter the tart pan and aluminum foil

  • 1 ½ lemons, scrubbed and dried
  • 1 ½ cups sugar
  • 1large egg, room temperature
  • 2 large egg yolks, room temperature
  • 1 ½Tbsp cornstarch
  • ½ cup heavy cream
  • 4Tbsp unsalted butter, melted and cooled
