Basque Cheesecake
Ingredients
  • 900g full-fat cream cheese, such as Philadelphia, brought to about 21°C
  • 270g sugar, plus 1 tablespoon (15 g), divided
  • 5 large eggs (275 g)
  • 2 yolks (30 g) from 2 large eggs
  • 230g heavy cream (about 1 cup)
  • 2 tablespoons (20 g) all-purpose flour
  • 2 teaspoons vanilla extract (10g)
  • 1 teaspoon (3 g) Diamond Crystal kosher salt; for table salt use half as much by volume or the same weight
  • Finely grated zest of 1 lemon (about 1 teaspoon; 5g)
