Garbage Pail Potatoes

Ingredients
  • 1 lb sausage or bacon
  • 1 pkg frozen hash browns, thawed (can use leftover baked potatoes, chopped up)
  • ¼ onion chopped
  • 5 eggs
  • ½ T yellow mustard
  • ¼ c milk
  • cheese to taste
Steps
  1. Brown sausage; set aside (you can use link sausage, but I allow it to cool, then chop up into small bites).
  2. Use grease from sausage to cook potatoes (remove excess if you use bacon and spray with non-stick spray).
  3. Brown potatoes and onions over medium-high heat until crispy.
  4. Meanwhile, beat eggs, mustard, and milk together.
  5. Return sausage (or bacon) to potatoes; add egg mixture.
  6. Cook thoroughly, then add cheese (I like to add about ½ the cheese - brown and turn over - add rest of cheese and brown).
  7. Serve warm with toast.
Notes
  • You can add whatever you have in your fridge - mushrooms, green peppers, fresh parsley, and chives, etc..
