Great way to use left over ham

Ingredients
- 9 in. pie crust
- 1 cup cooked ham in bite size pieces or cooked bacon chopped
- 1 ½ cups shredded cheese divided( Swiss, Cheddar, Mozzarella or a combination of)
- ¼ cup grated Parmesan (optional)
- ¼ cup chopped green or regular onions
- note: optional - add ¾ cup asparagus or mushrooms, or 2 cups fresh spinach
- 5 large eggs
- 1 cup 10% cream (use milk if you want it less rich)
- ½ tsp salt
- ¼ tsp black pepper
- ⅛ tsp of cayenne pepper
Steps
- Preheat oven to 375 degrees F.
- Roll and press a pie crust into a 9" pie plate, and crimp edges.
- Sprinkle meat, 1 cup of the cheese, and onions and any optional items into the pie crust.
- In a large bowl, whisk together eggs, milk, salt and peppers,
- Pour the egg mixture over top. Sprinkle remaining ½ cup cheese on top of quiche.
- Bake for about 40 minutes until the center is completely set. Let cool for 8 to 10 minutes before slicing and serving.
Notes
- Heat leftovers in the microwave the next day. Even more flavour! (or it freezes well also)
