Ham or Bacon & Cheese Quiche
Great way to use left over ham

Ingredients
  • 9 in. pie crust
  • 1 cup cooked ham in bite size pieces or cooked bacon chopped
  • 1 ½ cups shredded cheese divided( Swiss, Cheddar, Mozzarella or a combination of)
  • ¼ cup grated Parmesan (optional)
  • ¼ cup chopped green or regular onions
  • note: optional - add ¾ cup asparagus or mushrooms, or 2 cups fresh spinach
  • 5 large eggs
  • 1 cup 10% cream (use milk if you want it less rich)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp of cayenne pepper
Steps
  1. Preheat oven to 375 degrees F.
  2. Roll and press a pie crust into a 9" pie plate, and crimp edges.
  3. Sprinkle meat, 1 cup of the cheese, and onions and any optional items into the pie crust.
  4. In a large bowl, whisk together eggs, milk, salt and peppers,
  5. Pour the egg mixture over top. Sprinkle remaining ½ cup cheese on top of quiche.
  6. Bake for about 40 minutes until the center is completely set. Let cool for 8 to 10 minutes before slicing and serving.
Notes
  • Heat leftovers in the microwave the next day. Even more flavour! (or it freezes well also)
