Make this quick, one dish dinner with juicy shrimp, fluffy couscous and sweet tomatoes. It comes together in no time and looks incredible too.
Ingredients

  • 3 Tablespoons olive oil
  • 1 ½ lbs shrimp (any size), deveined and shelled, tail on or off
  • salt, pepper, to taste
  • 1 to 2 teaspoons dry herbs and spices, such as an all purpose seasoning containing granulated onion and garlic, dry chives, parsley, basil, oregano, coriander, etc.
  • 1 onion, chopped
  • 1 small jalapeño, minced
  • 2 to 4 garlic cloves
  • Juice of ½ a lemon
  • 1 pint grape tomatoes, sliced in half
  • 1 ½ cups couscous (plain, aka Moroccan)
  • 2 ¼ cups chicken or vegetable broth, hot
  • 1 Tablespoons fresh parsley and green onions, minced and thinly sliced
