The Ultimate Carrot Salad (With Hemp Hearts, Parsley, and Mint)
Ingredients

  • 1 heaping cup chopped parsley (flat leaf or curly parsley can be used)
  • ½ cup chopped mint leaves
  • 1 or 2 scallions, finely chopped
  • Optional: ½ cup pomegranate seeds
