Slow Cooker Creamy Corn

Ingredients
  • 24 oz. package frozen corn
  • 8 package, reduced fat cream cheese, cut into small cubes
  • 4 tbsp butter, diced
  • ½ cup skim milk
  • 1 tsp sugar
  • ½ tsp sea salt
  • Freshly ground black pepper
  • 1 to 2 fresh jalapenos (seeds and membranes removed-optional), minced
  • 1 cup sharp cheddar cheese, fat free or low fat, shredded
Steps
  1. In medium to large slow cooker, combine corn, cream cheese, butter, milk, sugar, salt, pepper, and minced jalapenos.
  2. Cover and cook on low for 4 hours.
  3. Add shredded cheddar heese, stirring until cheese is completely melted and sauce is creamy.
  4. Add seasonings if desired ane stir a bit more milk if sauce is too thick.
  5. Serve immediately.
