Zucchini Lemon Pasta
Ingredients
  • 1½ lbs zucchini, about 4 medium zucchini, thinly sliced
  • 1 yellow onion, diced
  • ¼ cup sun-dried tomatoes, chopped
  • 2 tbsp oil, from the sundried tomatoes
  • 2 tbsp nutritional yeast
  • 1 tbsp Italian seasoning
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 head garlic, top sliced off
  • 3 tbsp cashew cream, or vegan cream cheese
  • 1 cup basil leaves, or spinach, chopped
  • 1 tbsp balsamic glaze
  • 1 lemon, juiced
  • 4 cups rigatoni, reserve 1 cup of pasta water after cooking
