Made 9-12-24. Added garlic. Used fresh basil. Needs more spices but is good. Maybe try using zucchini soup receipe and just substitute yellow squash. Added thyme, rosemary, and celery salt. Much tastier!
Ingredients
  • 2 tablespoons butter
  • 2 onions, chopped
  • 5 cups chicken or vegetable broth
  • 2 potatoes, peeled and chopped
  • 2 carrots, peeled and thinly sliced
  • 8 cups chopped yellow summer squash
  • 2 tablespoons chopped fresh basil
  • salt and ground black pepper to taste
