Fruit Cake Recipe for Airfryer

Ingredients
  • 450g Currents, 300g Sultanas, ⅓ cup Whisky (I used Brandy) 1 ⅓ cup unsweetened Apple Juice, 100g dried Apricots, chopped,100g Butter, chopped, 2 teaspoons Bicarbonate Soda, 2 ½ cups wholemeal flour, 2 teaspoons baking powder,1 ½ teaspoons cinnamon, 2 eggs.
Steps
  1. PLace Currents, Sultanas and Whisky (Brandy) in a large mixing bowl. Heat Apple Juice (I sometimes use orange juice) chopped Apricots and butter together in a large pot until butter has melted. Dissolve bicarb soda in this hot mixture, then pour over fruit. Add dry ingredients and eggs and mix well. I line my dish with grease proof paper. The recipe says to cook at 160 deg for 55 minutes but tht is for the oven, I did this in the AF for about 40 minutes but please check because it will depend on your AF I did put it on 160deg but next time I will try 150deg, Enjoy.
