Shredded-Tofu Bowl Med Jalapeño-Dressing

  • A delicious, nutritious, and filling bowl with shredded, sautéed tofu, jalapeño dressing, millet, and soybeans. And a lot of greens, of course!
  • subheading: Ingredients 3 servings:
  • 3 servings of millet (cook according to the instructions on the package)
  • 400 g firm tofu
  • 1 to 2 tbsp tamari
  • Salt
  • Black pepper
  • 1 crushed garlic clove
  • 1 tbsp nutritional yeast
  • Cucumber
  • Carrots
  • Red cabbage
  • Green pre-cooked soy beans
  • Romain lettuce
  • 2 avocados
  • subheading: Vegan jalapeño-dressing, 1 jar:
  • ½ cup soaked or cooked cashews (soaked for 4 hours or cooked 5 min)
  • ½ avocado
  • 1 cup water
  • Jalapeño (adjust the amount depending on how spicy you want it. I used about 4 slices)
  • Juice from 1 lemon
  • ⅓ tsp garlic powder
  • Salt
  • Black pepper
