Healthy Slow Cooker Sweet Potato Mexican Quinoa

  • 1 large sweet potato peeled and diced
  • 2 cups broth (any kind)
  • ½ large red onion, finely diced
  • 3 Tbsp chili powder
  • 1 Tbsp garlic powder
  • 1 Tbsp ground cumin
  • 1 tsp paprika
  • 1 Tbsp sriracha
  • 2 tsp maple syrup
