Spanish rice

Ingredients
  • 2 cups Jasmine or Basmati rinsed very well.
  • 2 cups Water
  • ⅓ cup good quality, chunky salsa
  • 1 tb tomato paste
  • 2 tb pickled jalapeño juice (from escabeche)
  • Onion powder
  • Garlic powder
  • Oregano
  • 4 min HP, natural release, let it sit undisturbed for 15 to 20 minutes. When you open it, it will look like all the salas is resting on top. It’s okay! Use a wooden spoon/spatula and gently “fluff”
