Cucumber, tomato, onion salad
Fresh ingredients make this a wonderful side.

Ingredients
  • 2 lbs grape or cherry tomatoes
  • 1 large cucumber
  • 1 red onion, sliced thin
  • 5 large basil leaves (or 2 tbsp dried)
  • ¼ c red wine vinegar
Steps
  1. rinse vegetables
  2. cut tomatoes in half
  3. cut cucumber into thin semicircle slices
  4. slice onion thin and cut longer pieces to 1 to 2 inch segments
  5. chiffonade basil leaves finely
  6. combine all ingredients with vinegar and toss
