Version adapted to fit 5x7 pyrex dish that you cut in half in pan, not horizontally.

Ingredients
- 5 tablespoons (⅓ cup) almond flour
- ¾ teaspoon aluminum-free baking powder
- 4 tablespoon egg whites
- 1 ½ tablespoon butter
Steps
- In 5x7 pyrex dish, melt your butter (about 20 seconds in microwave).
- In a small bowl, add almond flour and baking powder and mix.
- Add egg whites and mix.
- Pour the melted butter from the pyrex dish into the bowl of egg white, almond flour and baking powder, and mix.
- Pour the mixed batter into the corningware dish.
- Smooth out with a spatula to cover dish.
- Microwave for 90 seconds (1 minute 30 seconds)
- Remove from microwave.
- While still in the pyrex dish, cut the bread down middle into two halves.
- Loosen the two halves and remove from dish.
- Place on ventilated sheet and toast lightly in toaster oven.
Notes
- Do not toast in a toaster. It doesn't have enough body to stand up in the toaster.
- Adaptations:
- I increased the amount of almond flour to 5 tablespoons to get an amount that would fit in the 5x7 dish.
- Although I initially decreased the butter to make it less oily, I had to up it again, along with a bit more egg white, in order to make it less lumpy and more easy to spread.
- I use the equivalent of just over 1 egg white (4 tablespoons) instead of one whole egg which tasted eggy to me.
- Be sure to add fats back in by using a mayonnaise or high fat topping if using this for a high fat diet.
- This is great as a sweet bread as well ... top with butter mixed with sugar substitute (Pyure), and cinnamon or maple extract.
