Like most of my Asian recipes this is 100% inauthentic. It reflects the flavor profile I crave.
Ingredients
  • 1# ground pork
  • ¼ C minced scallions
  • 1 clove garlic minced
  • 1 T minced fresh ginger
  • 1 T soy sauce
  • 1 T shaoxing wine
  • 1 t cornstarch
  • 1 t sugar
  • ½ t sesame oil
  • White pepper
  • 40 Shanghai dumpling wrappers (the white, round ones)
Steps
  1. Mix together pork, scallions, ginger, soy sauce, wine, cornstarch, sugar, sesame oil and a few dashes of white pepper.
  2. Knead together (see note)
  3. Fill each wrapper with a scant tablespoon( ~.5oz) of filling. Moisten wrapper edges and pleat to close
Notes
  • Let filling mixture rest for a few hours (in the fridge) to let the flavors meld.
