Like most of my Asian recipes this is 100% inauthentic. It reflects the flavor profile I crave.
Ingredients
- 1# ground pork
- ¼ C minced scallions
- 1 clove garlic minced
- 1 T minced fresh ginger
- 1 T soy sauce
- 1 T shaoxing wine
- 1 t cornstarch
- 1 t sugar
- ½ t sesame oil
- White pepper
- 40 Shanghai dumpling wrappers (the white, round ones)
Steps
- Mix together pork, scallions, ginger, soy sauce, wine, cornstarch, sugar, sesame oil and a few dashes of white pepper.
- Knead together (see note)
- Fill each wrapper with a scant tablespoon( ~.5oz) of filling. Moisten wrapper edges and pleat to close
Notes
- Let filling mixture rest for a few hours (in the fridge) to let the flavors meld.
