Ingredients
  • 2 Tbsp. extra virgin olive oil, plus more for drizzling
  • 1 Tbsp. of tomato paste
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, chopped
  • 6 garlic cloves, finely chopped
  • 1 large carrot
  • 1 large zucchini
  • 1 cup (240 mL) vegetable broth
  • 1 medium sweet potato, peeled and roughly chopped
  • 1 can (400g) chickpeas, drained and rinsed
  • 3 cups tempeh, cut into ½-inch cubes
  • 1 tsp. kosher salt, more to taste
  • 1 can (500g) crushed tomatoes
  • 95g dried dates, chopped
  • 1 medium lemon, zested and juiced
  • 1 handful of flat-leaf parsley or cilantro leaves and stems, chopped (about 10 to 15 grams)
  • 300g of couscous, cooked
  • subheading: Spice Mix:
  • 1 Tbsp. ras el hanout
  • 1 Tbsp. harissa
  • 1 tsp. ground coriander
  • 1 tsp. ground cinnamon
  • 1 tsp. cayenne pepper
  • ½ tsp. ground cumin
  • ½ tsp. ground turmeric
  • ½ tsp. ground ginger
  • A pinch of saffron
