  • 2 cloves of garlic, finely chopped
  • 1 inch ginger, finely chopped
  • 1 green Chili, chopped serrano or birds eye, or use half a jalapeño
  • 1 bay leaf or 6 curry leaves, , optional
  • 1 tsp coriander powder
  • ½ tsp ground cumin
  • ½ tsp garam masala, , optional
  • ½ tsp turmeric
  • ¼ tsp cayenne, optional
  • 1 tomato chopped
  • 1 to 2 cups chopped vegetables
  • ½ tsp salt
  • 2 cups water, 2.5 for saucier
