Gluten-Free Pumpkin Muffins
Ingredients
  • 2 large eggs
  • ¾ cup lightly packed brown sugar or coconut sugar
  • ¼ cup granulated sugar
  • 1 cup pumpkin puree
  • ¾ cup unsalted butter melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 ¾ cups 1:1 gluten free flour I use Bob's Red Mill
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup semi-sweet chocolate chips
