Lemon Raspberry Cake

This lemon raspberry cake is a white cake, made with added fresh or frozen raspberries, and topped with a cream cheese and lemon frosting. It’s a refreshing cake with a light lemon flavor.
Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 cups white sugar
  • 3 large eggs, at room temperature
  • ½ cup oil
  • ½ cup sour cream
  • ¼ cup freshly squeezed lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon lemon extract
  • 1 cup milk
  • 1 ½ cups raspberries
  • subheading: Frosting:
  • 8 ounces cream cheese, softened
  • ½ cup butter, softened
  • 4 ½ cups confectioners sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon lemon extract
