Ingredients
  • 5 pounds flank steak (Costco is your friend)
  • 1 ½ cup shoyu (I use Aloha - less salty)
  • ¼ cup brown sugar
  • 8 tsp Morton Tender Quick (this is a meat curing product, if you don’t want to use it, replace it with 2 T Hawaiian or kosher salt and 2 tsp sugar)
  • 4 cloves garlic crushed
  • 2 inch piece of ginger root crushed
  • 3 to 4 Chili pepper, minced or crushed (or use 2 to 3 tsp. Asian Chili sauce)
  • 3 T liquid smoke (I use Wrights)
  • 1 to 2 T ground black pepper
