Roasted Butternut Squash Carrot & Ginger Soup
Ingredients

  • ½ tsp salt, or more to taste
  • ½ tsp black pepper, or more to taste
  • ½ cup coconut milk, full-fat
  • 1 tbsp lime juice
  • subheading: OPTIONAL GARNISHES:
  • cilantro or parsley, chopped
  • pepitas, (pumpkin seeds)
