Whole Food Plant Based Mac and Cheese
Ingredients
  • 1 russet potato, peeled and cut into bite-sized pieces (1 ½ cups/ 240g)
  • 1 cup carrot, chopped (130g)
  • ¼ of an onion, diced (½ cup/ 65g)
  • 1 tablespoon peeled and diced turmeric (10g) (or 1 teaspoon turmeric powder)
  • 3 garlic cloves, minced
  • 2 cups water (475ml) plus another ½ cup (120ml), divided
  • ½ cup raw cashews, soaked in water for at least 10 minutes (75g)
  • ½ cup nutritional yeast (40g)
  • 1 teaspoon salt (6g)
  • Gluten free pasta (brown rice or quinoa pasta are my faves)
