Red Velvet Cake with Cream Cheese Frosting
Ingredients
  • 3 cups cake flour (spoon & leveled)
  • 1 tsp baking soda
  • 2 T unsweetened natural cocoa powder
  • ½ tsp salt
  • ½ C unsalted butter, softened to room temperature
  • 2 C granulated sugar
  • 1 C vegetable oil
  • 4 large eggs, room temperature and separated
  • 1 T pure vanilla extract
  • 1 tsp distilled white vinegar
  • red food coloring
  • 1 cup buttermilk, at room temperature, or 1 T vinegar or lemon juice in a C then fill C with milk

  • subheading: CREAM CHEESE FROSTING:
  • 16 oz full-fat block cream cheese, softened to room temperature
  • ¾ C unsalted butter, softened to room temperature
  • 5 ½ C confectioners’ sugar
  • 1 ½ tsp pure vanilla extract
  • pinch of salt, to taste
