Ingredients
- 3 cups cake flour (spoon & leveled)
- 1 tsp baking soda
- 2 T unsweetened natural cocoa powder
- ½ tsp salt
- ½ C unsalted butter, softened to room temperature
- 2 C granulated sugar
- 1 C vegetable oil
- 4 large eggs, room temperature and separated
- 1 T pure vanilla extract
- 1 tsp distilled white vinegar
- red food coloring
- 1 cup buttermilk, at room temperature, or 1 T vinegar or lemon juice in a C then fill C with milk

- 16 oz full-fat block cream cheese, softened to room temperature
- ¾ C unsalted butter, softened to room temperature
- 5 ½ C confectioners’ sugar
- 1 ½ tsp pure vanilla extract
- pinch of salt, to taste
