Meat can be Chicken or Rabbit
Ingredients
  • 2 cups apple cider or juice
  • 3 tablespoons catsup
  • 2 slices of bacon, cut up
  • 1½ teaspoon salt
  • ¼ dried savory, crushed
  • ⅛ teaspoon pepper
  • 2 to 2½ pounds broiler-fryer chicken or rabbit, cut up
  • 4 carrots, thinly sliced
  • 2 medium sweet potatoes, peeled and quartered
  • 2 medium onions, finely chopped (1 cup)
  • 1 stalk celery, cut into 1-inch pieces
  • 1 apple, peeled, cored , and chopped (1 cup)

Steps
  1. In a large kettle or Dutch oven, stir together first 7 ingredients.  Add chicken or rabbit. Bring to boiling. Reduce heat; cover and simmer for 45 minutes. Stir in carrots, sweet potatoes, onions, celery and apple.  Cover and simmer about 30 minutes or till meat and vegetables are tender.  Add thickener.  Cook ans stir till mixture is thickened.
  2. Crock pot directions:  Use ingredients as listed above. Place carrots, sweet potatoes, onions, celery, and apple in electric slow cooker. Add chicken or rabbit. Combine 1½ cups of the apple cider, the catsup, bacon, salt, savory basil, and pepper. Pour over meat and vegetables. Cover and cook on low-heat setting for 10 to 12 hours. Turn cooker to high heat setting. Blend the thickener with the remaining ½ cup cider; stir into stew.  Cover and cook 15 minutes or till thickened and bubbly.
Notes
  • *Thickener to replace 3 tablespoons of all-purpose flour
