Ingredients
  • 2 tbsp manteca (pork lard) or vegetable oil (used avocado oil on 5/14/22)
  • 2 ¼ lbs pork shoulder roast or Boston butt cut into 2 inch pieces
  • 1 tsp coarse salt
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp freshly ground black pepper
  • 1 cup Freshly Squeezed Orange Juice
  • ¼ cup freshly squeezed lime juice (juiced 4 limes on 5/14/22)
  • 2 leaves bay
  • 4 cloves sliced garlic (tried on 5/14/22)
