Ingredients
  • 1 lb. of rigatoni pasta
  • 1 cup of heavy cream
  • 6 oz. can of tomato paste
  • ½ cup of pecorino romano cheese for the sauce
  • ½ a medium onion
  • 4 cloves of garlic minced
  • 1 to 2 tbsp. of olive oil
  • 2 tbsp. of olive oil
  • 1 tsp. crushed red pepper flakes make as spicy as you like…I would start with ½ tsp. then add from there
  • 2 oz. of vodka
  • ¼ cup of hot water
  • ½ cup of pasta water about a ½ cup but save aside a full cup of pasta water in case you need more
  • salt & pepper to taste
