Tuna Melts with Roasted Bell Peppers
Ingredients
  • 2 large red bell peppers, halved and seeded
  • 2 5-ounce cans oil-packed light tuna, drained
  • ¾ cup chopped celery
  • ¼ cup mayonnaise
  • 3 tablespoons minced fresh dill
  • 2 tablespoons minced shallot
  • 1 tablespoon Dijon mustard
  • ⅛ teaspoon ground pepper
  • 4 whole-wheat English muffins, split and toasted
  • 4 slices Swiss or provolone cheese (4 ounces total), halved
