Black-Eyed Pea and Bell Pepper Salad

  • 4 cups black-eyed peas, drained and rinsed
  • 1 cup plum tomato, medium dice
  • 1 cup red pepper, medium dice
  • ½ cup red onion, diced
  • 1 jalapeno
  • ¼ cup scallions
  • ¼ cup italian parsley
  • ¼ cup rice wine vinegar
  • ¼ cup 10% oil blend
  • 1 tbsp honey
  • 1 tsp sea salt
  • 1 tsp ground black pepper
