Easy Better-Than-Takeout Chicken Fried Rice
Ingredients
  • 2 tablespoons sesame oil (I added a little more at the end to taste)
  • 2 tablespoons canola or vegetable oil
  • 1 to 1.5 pound boneless skinless chicken breasts, diced into ½-inch pieces
  • 1 ½ cups frozen peas and diced carrots blend (Use straight from the freezer)
  • 1 white onion, diced
  • 3 green onions, trimmed and sliced into thin rounds
  • 2 to 3 garlic cloves, finely minced
  • ½ tsp ground ginger
  • 3 large eggs, lightly beaten (I like maybe 1 or 2 more)
  • 4 cups cooked rice (the closer to room temp the better)
  • 3 tablespoons low-sodium soy sauce plus more to taste (needed maybe double?)
  • salt and pepper, optional and to taste
